Speaking of Tacos…

I don’t know about you but this whole quarantine time I’ve done nothing but eat and snack and eat and snack and eat and snack and…well…you get the picture.  Never in my long life have I ever climbed right out of bed and started thinking about food. I’m not a breakfast person. Coffee is really all I need. Maybe a glass of OJ (sans the vodka of course) to swallow some old lady pills but really that’s all I usually need.

Well…low and behold…this morning I woke up starving to death and thinking about tacos.  Of all things TACOS!  Why? I don’t really know. I’m not even a taco girl. Always thought of myself as more of a burrito type girl. Hmmmm….whatever.

Now I’ve heard this quarantine has made people have weird dreams and such so maybe I dreamed about eating tacos or something. Which again…is weird, so what to do…what to do. I know…I’ll scroll facebook until the feeling passes.

So I sit down with my coffee and I’m scrolling and scrolling and scrolling and what to my wandering eyes do appear?  A recipe for a “Walking Taco Bake“.  I KID YOU NOT! A freaking recipe for a Walking Taco Bake! Well…that’s it. It’s a sign. I must make it. Today. No questions. I just can’t get it off my mind. Here’s the recipe:

Walking Taco Bake

Ingredients:
1 lb ground beef or turkey
1 package taco seasoning or 3 tbsp homemade taco seasoning
2/3 cup water
Chili cheese fritos
1/2 can cheddar cheese soup
1/4 cup milk
1 cup mozzarella cheese, shredded
Toppings desired: salsa, sour cream, onion, tomato, avocado, etc

Instructions:
-Brown beef or turkey over medium high heat until no longer pink.
-Drain fat and add in the taco seasoning and water.
-Simmer on low heat for about 5 minutes, or until liquid is absorbed and meat is thoroughly coated in seasoning.
-Layer chili cheese Fritos on the bottom of and 8 x 8 baking dish.1

-Place seasoned meat on top of Fritos.2

In a saucepan, heat cheddar cheese soup and milk over low heat.

-Once warm, pour cheese mixture on top of meat.3

-Sprinkle mozzarella evenly over cheese and place pan in preheated oven, 350, for about 12-14 minutes.4

-Remove pan from oven and scoop desired amount onto plate.5

Top with favorite toppings!6

Doesn’t this look and sound yummy? Oh my goodness…

No go forth and cook and eat. But if you need me later I’ll probably be in a taco coma. Don’t come around asking for any either because I’ll probably eat and snack on it ALL DAY LONG! Enjoy and stay safe my friends.
